真空包装是将物品装入气密性容器后，在容器封口之前抽真空，使密封后的容器内基本没有空气的一种包装方法。真空包装法也称减压包装法或排气包装法。这种包装可阻挡外界的水汽进入包装容器内，也可防止在密闭着的防潮包装内部存有潮湿空气，在气温下降时结露。采用真空包装法，要注意避免过高的真空度一般的原粮以及粮食加工过的商品都可以采用真空包装，真空包装不但可以避免或降低粮食的氧化、变色、变味，而且抑制了某些霉菌和细菌的生长

目前粮食、油料等加工保鲜都还基本处于低级、粗放的状态，而且我国的冷藏条件也不能与美国、日本等发达国家相比，这样造成农产品大量损耗和资源浪费。而真空包装能维持粮食农产品的品质和营养成分，倍受粮食行业的重视。

真空包装除控制外界温度和无菌以外，更重要的是控制粮食合适的气体环境，达到预期的保鲜目的。其主要方法有机械挤压式、吸管脱气式等方法。无论何种方式，都是要把包装袋内的空气抽出，然后热封。其主要特点是：降低袋内含氧量，抑制霉菌、细菌生长发育，控制粮食变质，达到保鲜、保质的目的。另外，真空包装后，还可抗机械压力，减轻振荡，既利于远途运输，又利于销售
